Counting the gap, or counting the days
These are different questions and both come up. From Monday to Friday is four days apart, but it is five days of leave. The tick box switches between them, and getting it wrong by one day is what causes most disputes over notice periods and hotel bills.
Working days
Monday to Friday are counted; Saturdays and Sundays are not. Public holidays are deliberately not deducted, because they differ by state and by year — subtract your own from the figure rather than trusting a number that quietly guessed.
Why months are awkward
A month is not a fixed length, so "two months later" from 31 January lands on 28 or 29 February. Adding months here clamps to the last valid day of the target month, which is what calendars and contracts normally intend.

Because months are different lengths. "3 months and 5 days" is exact as a calendar description, while the total in days depends on which months those were. Both figures are correct; they answer different questions.
